Bake Sale at the Fun Fair!

Coffee, tea, baked goods and pastries will be for sale during the Fun Fair in the tea room. We are asking families to donate baked goods of all shapes, sizes and flavours. You may bring your items to the school office Friday May 22 and directly to the tea room on Saturday May 23. No nuts please.

We would love to offer some gluten free options. See the recipes below for ideas.

Classic shortbread recipe:

  • 1/2 c cornstarch
  • 1 c rice flour
  • 1/2 c icing sugar (sifted together)
  • 3/4 c butter
  1. Sift together cornstarch, flour, and icing sugar.
  2. Mix in 3/4 c of butter, form ball of dough. Rest 30 minutes minimum.
  3. Roll into balls and press onto parchment lined sheets.
  4. Bake in preheated oven at 300° F about 20 min until golden.

Often made into logs, refrigerate and cut and bake when you need. Can make thumb print cookies and filling with jam or choc. This is the basic recipe can be modified with other ingredients: coconut, chocolate chips, dried fruit.

Old fashion coconut macaroons (super easy to make):

  1. Mix 14 oz sweetened shredded coconut, 14 oz condensed milk, 1 tsp vanilla, 1/2 tsp lemon rind in bowl, small pinch of salt
  2. beat 2 egg whites until kind of firm, fold carefully into coconut
  3. Drop by table spoons onto lined parchment, bake at preheated 325° F for about 25 min until golden

You may add other things or dip it in chocolate, or make
thumbprints and add raspberry jam

Classic chocolate brownie:

  • 6 tbsp unsalted butter
  • 3/4 c sugar
  • 8 oz semisweet choc plus 1/4 cup chips for stirring into batter
  • 2 eggs
  • 1 tsp vanilla
  • 1 tbsp cocoa powder
  • 3 tbsp corn starch
  • pinch of salt
  1. Sieve cornstarch and cocoa set aside
  2. Melt butter add sugar, whisk til slightly melte, add choc whisk until velvety, smooth.
  3. remove from heat, let cool a little add eggs and beat about 1 min or 2
  4. stir in 1/4 c choc chips
  5. Pour into prepared 9 x 9 pan lined with parchment, bake at 350F 20-25 min. It is important not to over-bake!
  6. Cool completely before removing or it can crumble.
  7. (we flash freeze) and then cut.
